How to get the model:

/give NICK flint{CustomModelData:1001}

CustomModelData: here you choose the type of bilboards from 1001 to 1006
if the command does not work use /minecraft:give

To create a billboard use the command:

/summon armor_stand ~ ~ ~ {ShowArms:1b,ArmorItems:[{},{},{},{}],HandItems:[{id:"flint",Count:1b,tag:{CustomModelData:1001}},{}],Pose:{LeftArm:[0f,0f,0f],RightArm:[0f,0f,0f]}}
