Hey it seems every time I add the coffee protect plugin, my server has a lot of crashing.

I doub that has anything to do with CoffeeProtect since so far i've never received any similar reports and the error doesn't point anywhere to coffee protect.
If it still occurs, i'd recommend u take a look at some other stuff such as ur jvm setup, plugins and general server settings
